  • Beef Broth (Stockpot 7L)
  • 1 kg beef shank
  • 2 garlic cloves
  • 1/4 white onion
  • 1 ear of corn
  • 5 L water
  • Salt to taste
  • Optional Flavoring (Stockpot 4L)
  • 30 ml vegetable oil
  • 4 garlic cloves
  • 1/4 white onion
  • 4 tomatoes
  • 1 sprig of epazote, basil or cilantro
  • 8 dry pasilla peppers or dry hot chili peppers
  • Garnish
  • 1 potato
  • 2 carrots
  • 1 chayote squash
  • 150 gm green beans
  • 1 zucchini
  • For Serving
  • Lemon juice
  • Corn tortillas

Instructions

  1. Place all ingredients for the beef broth into the Universal Cookware 7L Stockpot, cover and cook on medium-high heat for 20 min.

  2. Remove cover and continue cooking for 15 min.

  3. At the same time, prepare optional flavoring. Heat 15 ml / ±1 tbsp oil in the Universal Cookware 4L Stockpot. Add remaining ingredients for optional flavoring and sauté on medium heat until the onion looks transparent. Remove into separate bowl and add 120 ml / ±½ cup beef broth, stir to combine.

  4. Heat remaining 15 ml / ±1 tbsp oil in the 4L Stockpot. Strain flavoring mixture into the Stockpot. Cook on high heat for 1-2 min. then add to the beef broth in the Stockpot 7L. Season with salt.

  5. Add potato and carrots to the 7L Stockpot. Cook for 10 min.

  6. Add chayote squash, green beans and cook for 10 min.

  7. Add zucchini and cook for 10 min.

  8. For serving, add lemon juice and eat with corn tortillas.
