  • 1 white onion
  • 45 ml olive oil
  • 400 gm long grain rice
  • 700 ml hot water
  • 7 ml salt
  • Pepper or chili powder
  • 10 sprigs of cilantro
  • 1 lime

Instructions

  1. Finely chop onion using the Herb Chopper.

  2. In the Universal Cookware 4L Stockpot, sauté the chopped onion with olive oil on medium-high heat for 3 min., stirring frequently. Add the rice (unwashed) and cook for an additional 2 min., stirring frequently.

  3. Add hot water and salt. Stir, cover and bring to a boil. Reduce to medium-low heat and continue to cook for approx. 16-18 min.

  4. Turn off heat and allow to stand for 5 min. covered, then fluff the rice with a fork.

  5. Add pepper or chili powder, chopped cilantro and lime juice, then serve.
