- 1 white onion
- 45 ml olive oil
- 400 gm long grain rice
- 700 ml hot water
- 7 ml salt
- Pepper or chili powder
- 10 sprigs of cilantro
- 1 lime

Finely chop onion using the Herb Chopper.

In the Universal Cookware 4L Stockpot, sauté the chopped onion with olive oil on medium-high heat for 3 min., stirring frequently. Add the rice (unwashed) and cook for an additional 2 min., stirring frequently.

Add hot water and salt. Stir, cover and bring to a boil. Reduce to medium-low heat and continue to cook for approx. 16-18 min.

Turn off heat and allow to stand for 5 min. covered, then fluff the rice with a fork.

Add pepper or chili powder, chopped cilantro and lime juice, then serve.
