Rice, nasi, fàn- are just some of the many ways we call this staple food that can be found in almost all our houses. A bowl or plate of rice be it white, brown or multigrain brings back memories with loved ones. People connect over eating home cooked food together and eating rice provides some sort of comfort to most of us. Being Malaysian, we have a wide variety of rice dishes: nasi ulam, nasi kerabu, nasi lemak, chicken rice, banana leaf rice, nasi briyani and not to forget the many dishes that just tastes better when you eat it with rice. Let’s get to know a little bit about the different types of rice we have:

  1. White rice- Grown locally (Made in Malaysia!) or from neighbors Thailand or Vietnam, white rice is most commonly as part of home meal prep and in eateries.

  2. Brown rice- it is actually white rice but with the bran layer still covering it, giving it a nutty flavor and a chewier texture as compared to white rice. Brown rice has a longer cooking time compared to white rice as the bran layer acts like a barrier that slows down water absorption.

  3. Fragrant rice- you know that bowl of steaming white rice that smells heavenly? That’s fragrant rice and comes mainly from Thailand. It is longer (but not as long as basmati rice), has a pearly white color and gives off a pandan scent.

  4. Glutinous rice- Also known as nasi pulut, this rice has higher starch content and tends to stick together when cooked. Although it is sticky, the texture is silky and it has a mildly sweet after taste. It is used in dishes like pulut berinti, lo mai gai (steamed glutinous rice with chicken), nasi kunyit, mango sticky rice, bak chang (meat rice dumplings) just to name a few.
